Description
The Villa Corzo area, located in the heart of Chiapas, is renowned for its extraordinary specialty coffee, locally known as "Oro Verde." This region boasts optimal agro-climatic conditions, characterized by high altitude, rich soils, and abundant biodiversity. The unique climate of the area and the perfect alternation of dry and wet seasons are crucial for coffee cultivation, providing ideal support for the life cycle of coffee plants. During harvest, cooler temperatures and limited rainfall facilitate extended fermentation and effective drying of the beans, significantly enhancing the quality of the coffee produced.
Local producers, many of whom are small-scale farmers, employ traditional cultivation techniques and are committed to organic farming practices to maintain soil health and enhance the aromatic profile of their beans. These farmers are participating in the "Alliance for Sustainable Landscapes and Markets" project, an initiative aimed at restoring a sustainable landscape in the protected areas of La Sepultura and El Triunfo through significant reforestation activities and the replanting of new coffee plants.
After harvesting, the coffee varieties Caturra, Costa Rica 95, Oro Azteca, Catimor, and Marsellesa are processed using the washed method. This process involves removing the pulp from the fruits, followed by fermentation in water tanks that lasts from 24 to 48 hours. Once fermentation is complete, the beans are dried on terraces located near the farmers' homes for a period of 12-14 days, until the desired moisture level is reached.
In the cup, the coffee from Villa Corzo showcases a well-balanced acidity, a full body, and aromatic notes of hazelnut, chocolate, and malt. These qualities blend together to create a sweet and lingering aftertaste, turning each sip into an extraordinary and satisfying experience.
